Last weekend I posted a picture of the cookie baked oats I made and so many recipe questions and requests. When I tell you it legit tastes like you are eating oatmeal chocolate chip cookies, I am not lying. Even better, they are high in protein, lower in sugar, and full of good ingredients. I love serving this with some yogurt for breakfast too. Here is the recipe (inspired by Big Mans World brownie baked oats):
Ingredients:
- 1 1/4 cup oats
- 2/3 cup protein powder (I used the Ghost Chips Ahoy Protein – you can buy it here)
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup coconut oil melted (I swapped with greek yogurt and it worked great!)
- 1/4 cup unsweetened apple sauce
- 1/2 cup sweetener of choice (I used date syrup and could even use less than 1/2cup because the protein is sweet)
- Chocolate chips – measure with your heart!
Instructions:
- Preheat oven to 350 degrees
- Mix together dry ingredients in one bowl and wet ingredients in another
- Combine wet and dry ingredients until combined and fold in chocolate chips
- Bake for 15-20 ish minutes in a oven-safe pan.
- Let cool and enjoy!
